Cooking Instructions
  1. Heat 2 tablespoons of olive oil in a large, deep pot over medium heat for 1-2 minutes until shimmering.
  2. Add 1 pound of diced boneless skinless chicken breasts with Cajun seasoning, salt, and pepper. Cook for 5-7 minutes until browned.
  3. In the same pot, add 1 medium diced onion and 3 minced garlic cloves. Sauté for 2-3 minutes until the onions are translucent.
  4. If using, add 1 diced bell pepper and cook for an additional 2 minutes.
  5. Stir in 1 cup of orzo pasta, 3 cups of chicken broth, and 1 cup of heavy cream. Increase heat to high and bring to a boil for 3 minutes.
  6. Reduce heat to low, cover, and let it simmer for 10-12 minutes until orzo is tender.
  7. Return cooked chicken to the pot and mix in ½ cup of grated Parmesan cheese. Stir for about 2 minutes until combined.
  8. Taste and adjust seasoning with salt, pepper, or Cajun seasoning. Serve warm garnished with parsley.
