Preheat a skillet or griddle over medium heat.
Spread pesto sauce on one side of each slice of Italian bread.
On the non-pesto side of 4 slices, layer salami, ham, provolone cheese, and roasted red peppers.
Season with Italian seasoning, salt, and pepper.
Top with the remaining slices of bread, pesto side down, to form sandwiches.
Brush the outside of each sandwich with olive oil.
Place the sandwiches in the skillet or griddle. Cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
Remove from heat, slice in half, and serve warm.
