Ingredients
  

For the Rice
  • 1 cup Jasmine Rice Rinse until water runs clear.
For the Tofu
  • 1 block Firm Tofu Drain and press for best results.
For Sautéing
  • 2 tablespoons Vegetable Oil Can substitute with sunflower or canola oil.
  • 2 cloves Garlic Minced; for maximum flavor, use fresh.
For the Veggies
  • 2 cups Mixed Vegetables Fresh or frozen.
  • 2 stalks Green Onions Chopped.
For the Seasoning
  • 2-3 tablespoons Soy Sauce/Tamari Tamari makes it gluten-free.
  • 1 tablespoon Sesame Oil Can substitute with olive oil.
  • Salt To taste.
  • Pepper To taste.
For the Final Touch
  • Sesame Seeds (Optional) Sprinkle on top before serving.

Method
 

Step-by-Step Instructions
  1. Start by rinsing jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions for 15-20 minutes. Once cooked, let it cool completely.
  2. While the rice cools, prepare the tofu by draining and pressing it for at least 15 minutes. Cut the tofu into bite-sized cubes.
  3. Heat vegetable oil in a large skillet over medium heat. Add tofu cubes and cook for 5-7 minutes until golden brown and crispy. Remove and place on a paper towel-lined plate.
  4. In the same skillet, add more oil if needed and sauté minced garlic for 30 seconds. Add mixed vegetables and cook for 3-4 minutes until tender.
  5. Return the crispy tofu to the skillet, add the cooled jasmine rice, soy sauce, and sesame oil. Stir for 2-3 minutes to heat through.
  6. Fold in chopped green onions and season with salt and pepper. Stir for another minute.
  7. If desired, sprinkle sesame seeds over the Tofu Fried Rice before serving and enjoy warm.
