In a mixing bowl, combine the shredded coconut, crushed pineapple, almond flour, honey (or maple syrup), vanilla extract, and salt. Mix until all ingredients are well combined.
Using your hands, form the mixture into small bite-sized balls, about 1 inch in diameter. Place the formed bites on a parchment-lined baking sheet.
If using, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
Drizzle or dip each coconut pineapple bite into the melted chocolate, then return them to the parchment-lined baking sheet.
Refrigerate the bites for at least 30 minutes to set before serving.
