Ingredients
  

For the Dough
  • 4 cups All-Purpose Flour can use gluten-free blend
  • 1/4 cup Unsalted Butter must be softened
  • 1 cup Coconut Milk warm to activate yeast
  • 2 tablespoons Sugar use coconut sugar for twist
  • 2 teaspoons Yeast ensure it's fresh
For the Filling
  • 1 cup Crushed Pineapple drained thoroughly
  • 1 cup Shredded Coconut finely shredded for best results
  • 1 tablespoon Cinnamon add nutmeg for warmth if desired
For the Glaze
  • 4 ounces Cream Cheese use full-fat for best results
  • 1 cup Powdered Sugar sift before using
  • 2–3 tablespoons Extra Coconut Milk use to adjust consistency

Method
 

Dough Preparation
  1. In a mixing bowl, whisk together warm coconut milk, yeast, and sugar. Let sit for 5 minutes until frothy.
  2. Gradually add flour and melted butter, mixing until a soft dough forms.
  3. Knead dough on a floured surface for 5 minutes until smooth, then let rise in a greased bowl for 1 hour.
Filling Preparation
  1. Drain crushed pineapple thoroughly and roll out the risen dough into a large rectangle.
  2. Spread softened butter, then sprinkle drained pineapple, shredded coconut, and cinnamon on the dough.
Shape and Slice
  1. Roll the dough tightly to create a log and slice into 8 equal rounds.
  2. Place pinwheels in a baking pan, cover lightly, and let rise for 20 minutes.
Bake
  1. Preheat oven to 350°F. Bake rolls for approximately 25 minutes until golden brown.
Glaze
  1. Whisk cream cheese, powdered sugar, and coconut milk until smooth while rolls bake.
  2. Spread glaze over warm rolls and top with coconut flakes and caramelized pineapple.
