Ingredients
  

  • 1 lb ground turkey
  • 2 cups diced sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • 1 can black beans drained and rinsed
  • ½ cup salsa
  • ¼ cup water
  • Chopped cilantro and lime wedges for serving

Method
 

  1. In a large skillet over medium heat, cook ground turkey until browned. Remove and set aside.
  2. Add olive oil to the skillet, then cook sweet potatoes and onions until softened, about 8–10 minutes.
  3. Return turkey to the skillet. Stir in garlic powder, cumin, chili powder, paprika, salt, black beans, salsa, and water.
  4. Cover and simmer for 10–12 minutes, until sweet potatoes are tender and mixture is heated through.
  5. Garnish with chopped cilantro and a squeeze of lime.

Notes

  • For extra heat, add jalapeños or red pepper flakes.
  • Serve in bowls, tacos, or over rice.
