  • 2 medium Sweet Potato Cook and mash before use
  • 1 cup Flour (all-purpose or gluten-free) Cassava flour is a good gluten-free option

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (392°F). Wash and scrub the sweet potatoes, then place them on a baking sheet and bake for about 40 minutes, or until fork-tender.
  2. Once baked, let the sweet potatoes cool for about 10 minutes, peel off the skins, and mash until smooth.
  3. Gradually add your choice of flour to the mashed sweet potatoes and mix to form a soft dough. Knead for about 2-3 minutes.
  4. Divide the dough into equal portions. Roll each piece into a thin circle, about 6-8 inches in diameter.
  5. Heat a non-stick skillet over medium heat. Cook each tortilla for about 1-2 minutes on each side until lightly browned.
  6. Stack the warm tortillas on a plate and cover with a kitchen towel to keep them warm.

Notes
