- Preheat your oven to 200°C (392°F). Wash and scrub the sweet potatoes, then place them on a baking sheet and bake for about 40 minutes, or until fork-tender.
- Once baked, let the sweet potatoes cool for about 10 minutes, peel off the skins, and mash until smooth.
- Gradually add your choice of flour to the mashed sweet potatoes and mix to form a soft dough. Knead for about 2-3 minutes.
- Divide the dough into equal portions. Roll each piece into a thin circle, about 6-8 inches in diameter.
- Heat a non-stick skillet over medium heat. Cook each tortilla for about 1-2 minutes on each side until lightly browned.
- Stack the warm tortillas on a plate and cover with a kitchen towel to keep them warm.

Store cooked tortillas covered with a kitchen towel at room temperature for up to 3-4 days. For longer storage, use an airtight container in the fridge or freeze with parchment paper in between them.
