Step-by-Step Instructions
  1. Wash the potatoes under cold water, scrub clean, and place in a pot. Cover with water and add salt. Boil then simmer for 15-20 minutes until tender.
  2. In a medium bowl, whisk together olive oil, lemon juice, sumac, salt, and pepper to make the dressing. Set aside.
  3. Drain potatoes and let cool, then cut into bite-sized cubes and place in a large mixing bowl.
  4. Add parsley, red onion, cucumber, tomatoes, olives, and feta to the potatoes. Toss gently.
  5. Drizzle dressing over the salad and toss gently to coat without mashing the potatoes.
  6. Taste and adjust seasoning if needed. Add more salt or lemon juice as preferred.
