A delicious and easy recipe for Walking Taco Casserole that combines all the flavors of a walking taco in a hearty casserole form.

Ingredients
  

  • 2 cups crushed tortilla chips
  • 1 pound ground beef
  • 1 small onion diced
  • 1 packet taco seasoning
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces corn, drained
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/4 cup sliced green onions for garnish
  • 1/4 cup chopped fresh cilantro optional, for garnish

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
  3. Stir in the taco seasoning, black beans, corn, and salsa. Cook for an additional 3-4 minutes until heated through.
  4. In a 9x13 inch baking dish, layer half of the crushed tortilla chips on the bottom.
  5. Spread the beef mixture evenly over the tortilla chips.
  6. Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
  7. Add the remaining crushed tortilla chips on top, followed by the remaining cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for 5 minutes. Top with sour cream, green onions, and cilantro if desired before serving.
