Ingredients
  

  • 1 can black beans drained and rinsed
  • 1 cup corn fresh, canned, or thawed from frozen
  • 1 red bell pepper diced
  • 1/4 cup red onion chopped
  • 1/4 cup cilantro chopped
  • 1 avocado diced
  • 2 tbsp olive oil
  • Juice of 1 lime
  • Salt and pepper to taste

Method
 

  1. Combine black beans, corn, bell pepper, onion, and cilantro in a large bowl.
  2. Whisk together olive oil, lime juice, salt, and pepper, then pour over the salad.
  3. Toss gently and fold in avocado just before serving.

Notes

  • Let the salad chill for 30 minutes to enhance flavor. Pairs well with grilled meats or as a taco topping.
