- Melt ½ cup of butter in a medium saucepan over medium heat. Stir in 1 cup of granulated sugar, ½ cup of milk, and ¼ cup of fresh lemon juice. Bring to a gentle boil for about 2-3 minutes.
- Once boiling, keep stirring vigorously for 1 minute to thicken slightly. Remove from heat.
- In a large mixing bowl, pour the warm mixture over 3 cups of rolled oats. Stir in zest of one lemon, 1 teaspoon of vanilla extract, and a pinch of salt until fully combined.
- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper, shaping them into rounds if desired.
- Chill in the refrigerator for at least 30 minutes until set.
