Step‑by‑Step Instructions for LEMON PIZZA
  1. Prepare your no-knead pizza dough according to your favorite recipe. Allow it to rise at room temperature for about 1 hour, or until it has doubled in size.
  2. While the dough rises, slice fresh mozzarella into ½ inch thick pieces and pat it dry if it's in water.
  3. Once risen, place the dough on parchment paper and stretch it into a 9x13 inch shape.
  4. In a clean jar, combine olive oil, water, chopped parsley, minced garlic, lemon juice, lemon zest, salt, and pepper. Shake until combined.
  5. Create dimples in the stretched dough, pour the prepared brine over it, and then distribute mozzarella slices evenly.
  6. Preheat your oven to 450°F. Slide the pizza onto a preheated pizza stone and bake for 8-10 minutes.
  7. Drizzle with fresh lemon juice, sprinkle with grated Parmesan and fresh parsley before serving.
