  • 2 large Eggs
  • 1/2 cup Grated Parmesan Cheese

  • 1 medium Chopped Onion
  • 1 cup Pizza Sauce Opt for gluten-free if needed
  • 1 cup Diced Green Bell Pepper Can substitute with other bell peppers
  • 1 cup Sliced Mushrooms Optional
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Black Pepper
For the Topping
  • 1 cup Shredded Mozzarella Cheese
  • 1/2 cup Shredded Cheddar Cheese

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Grate the zucchini and sprinkle with salt. Let it rest for about 10 minutes.
  3. Drain the zucchini using a clean kitchen towel to remove excess liquid.
  4. Mix the drained zucchini with eggs, Parmesan cheese, and half of the mozzarella cheese.
  5. Grease a 9x13-inch baking dish and spread the zucchini mixture to form the crust. Bake for 20 minutes.
  6. Cook ground beef and chopped onion in a skillet until browned and translucent, about 6-8 minutes.
  7. Add the pizza sauce, bell pepper, mushrooms, oregano, garlic powder, and black pepper to the meat mixture. Stir and simmer for 5 minutes.
  8. Spread the beef mixture evenly over the baked crust.
  9. Sprinkle the remaining mozzarella and cheddar cheese over the beef layer.
  10. Bake the assembled casserole for an additional 20 minutes until the cheese is melted and bubbly.
  11. Let cool for a few minutes before serving.
