Ingredients
  

  • 4 medium zucchini sliced into 1/4-inch rounds
  • 1 can 15 ounces crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh basil for garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a greased 9x13-inch baking dish, layer half the zucchini slices.
  3. Sprinkle with salt, pepper, garlic powder, and Italian seasoning.
  4. Top with half of the crushed tomatoes, then sprinkle with mozzarella and Parmesan.
  5. Repeat the layers.
  6. Drizzle lightly with olive oil.
  7. Bake for 30–35 minutes until bubbly and cheese is golden.
  8. Garnish with fresh basil before serving.

Notes

  • Add ricotta between layers for a creamier casserole.
  • Use yellow squash for a colorful variation.
  • Let it sit for 5 minutes before slicing to firm up.
