Ingredients
- 12 cooked breakfast sausage links
- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 4 teaspoons baking powder
- ½ teaspoon fine sea salt
- 1 ⅓ cups buttermilk
- 1 large egg, well beaten
- 4 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- Cook the sausage links according to the package directions and set them aside.
- In a large bowl, whisk together the flour, sugar, baking powder, and sea salt.
- In a separate bowl, mix the buttermilk, beaten egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until combined. Let the batter sit for 5 minutes.
- Heat a non-stick skillet over medium heat and lightly spray with cooking spray.
- Scoop about 3 tablespoons of batter onto the skillet for each pancake. Cook for 2–3 minutes until bubbles form on the surface and the bottom turns golden brown. Flip and cook for another 2–3 minutes until golden.
- Place a cooked pancake on a plate and add a sausage link in the center. Roll the pancake around the sausage and set it seam-side down.
- Repeat with the remaining batter and sausage links.
- Serve warm with syrup drizzled on top or on the side for dipping.
Notes
- Buttermilk Substitute: Use 1 ⅓ cups of regular milk mixed with 1 tablespoon of lemon juice or vinegar if buttermilk is unavailable.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a microwave or oven.
- Freezing: Assemble and freeze for up to one month. Reheat directly from frozen in the oven.
