Ingredients

  • 1 pound lean ground beef
  • ½ yellow onion, chopped
  • 1 ounce taco seasoning (1 packet)
  • 2 tablespoons minced fresh cilantro
  • 6 burrito-sized flour tortillas
  • 16 ounces refried beans, warmed (1 can)
  • 1½ cups shredded Mexican cheese blend
  • 2 cups cooked rice
  • 1 cup salsa (use your favorite brand)

  • Sour cream
  • Hot sauce
  • Guacamole

Instructions

  • Preheat the Oven:
    Preheat your oven to 375°F. Line a baking sheet with parchment paper and set aside.
  • Cook the Beef Filling:
    • In a large skillet over medium-high heat, cook the ground beef and chopped onion until the beef is browned and no longer pink. Break the meat apart with a spoon as it cooks.
    • Add the taco seasoning to the skillet and stir for about a minute to combine.
    • Stir in the minced cilantro and remove from heat.
  • Assemble the Burritos:
    • Lay a tortilla flat on a clean work surface. Spread a thin layer of warmed refried beans across the center.
    • Add a scoop of rice, followed by the beef mixture, shredded cheese, and a spoonful of salsa.
    • Wrap the tortilla tightly, folding in the sides to create a burrito.
    • Place the burrito seam-side down on the prepared baking sheet. Repeat this process for the remaining tortillas.
  • Bake the Burritos:
    • Place the baking sheet in the preheated oven and bake for 5–10 minutes, or until the cheese melts and the tortillas are slightly crispy.
  • Serve and Enjoy:
    • Serve the burritos warm, with optional toppings like sour cream, hot sauce, and guacamole on the side.
