Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- Salt and pepper to taste
- Oil for frying
- 1 roasted red bell pepper
- 1/4 cup almonds (toasted)
- 1 garlic clove
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1/2 tsp smoked paprika
- 4 brioche buns
- Lettuce, tomato, and onion slices
Instructions
- Marinate the chicken in buttermilk, garlic powder, smoked paprika, salt, and pepper for 30 minutes.
- Blend roasted red pepper, almonds, garlic, olive oil, vinegar, paprika, salt, and pepper into a smooth romesco sauce.
- Bread the chicken with flour, buttermilk, and breadcrumbs. Fry until golden and cooked through.
- Assemble the sandwich with buns, romesco sauce, chicken, and toppings.
