Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste
  • Oil for frying
  • 1 roasted red bell pepper
  • 1/4 cup almonds (toasted)
  • 1 garlic clove
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1/2 tsp smoked paprika
  • 4 brioche buns
  • Lettuce, tomato, and onion slices

Instructions

  • Marinate the chicken in buttermilk, garlic powder, smoked paprika, salt, and pepper for 30 minutes.
  • Blend roasted red pepper, almonds, garlic, olive oil, vinegar, paprika, salt, and pepper into a smooth romesco sauce.
  • Bread the chicken with flour, buttermilk, and breadcrumbs. Fry until golden and cooked through.
  • Assemble the sandwich with buns, romesco sauce, chicken, and toppings.

Notes
