Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1/4 cup unsalted butter (for glaze)
- 2 tablespoons honey
Instructions
- Preheat oven to 375°F and grease a mini muffin tin.
- Mix cornmeal, flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Whisk buttermilk, eggs, and melted butter in a separate bowl. Combine with dry ingredients until just mixed.
- Fill mini muffin cups 2/3 full and bake for 12-15 minutes.
- Melt butter with honey for the glaze and brush over warm poppers.
