Ingredients

  • 4 chicken thighs, bone-in, skin-on
  • 1 cup buttermilk
  • 2 teaspoons hot sauce
  • 1 cup flour
  • 1/4 cup cornstarch
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Vegetable oil, for frying

Instructions

  • Marinate chicken in buttermilk and hot sauce for at least 4 hours or overnight.

  • Mix flour, cornstarch, and seasonings in a large bowl.

  • Remove chicken from marinade, let excess drip off, and coat thoroughly in flour mixture.

  • Heat oil in a heavy skillet to 350°F (175°C).

  • Fry chicken in batches until golden brown and internal temp is 165°F, about 12–15 minutes.

  • Drain on paper towels and let rest before serving.
