Ingredients

  • 1 whole chicken 4–5 lb
  • 1/2 cup butter softened
  • 4 garlic cloves minced
  • 1 tablespoon chopped parsley
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon halved
  • 1 onion quartered

Instructions

  • Preheat oven to 425°F

  • Mix butter with garlic, herbs, salt, and pepper

  • Pat chicken dry and rub herb butter under skin and over top

  • Stuff cavity with lemon and onion

  • Place chicken in roasting pan and roast for 1 hour 15 minutes or until internal temp reaches 165°F

  • Rest for 10 minutes before carving
