This refreshing shrimp ceviche is full of zesty lime juice, crisp vegetables, and a touch of heat. It’s light, vibrant, and perfect for summer appetizers or snacks.
Ingredients
- 1 lb cooked shrimp, chopped
- 1 cup lime juice (about 6–8 limes)
- 1/2 red onion, finely chopped
- 1 jalapeño, minced
- 1/2 cup chopped tomatoes
- 1/2 cup chopped cucumber
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- Optional: diced avocado for topping
Instructions

In a bowl, combine shrimp and lime juice. Let it marinate for 10–15 minutes.

Add onion, jalapeño, tomato, cucumber, cilantro, salt, and pepper.

Mix well and refrigerate for 30 minutes to allow flavors to meld.
