Description

This refreshing shrimp ceviche is full of zesty lime juice, crisp vegetables, and a touch of heat. It’s light, vibrant, and perfect for summer appetizers or snacks.


Ingredients

  • 1 lb cooked shrimp, chopped
  • 1 cup lime juice (about 68 limes)
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Optional: diced avocado for topping

Instructions

  • In a bowl, combine shrimp and lime juice. Let it marinate for 10–15 minutes.

  • Add onion, jalapeño, tomato, cucumber, cilantro, salt, and pepper.

  • Mix well and refrigerate for 30 minutes to allow flavors to meld.

  • Serve chilled with tortilla chips or in lettuce cups.

  • Add avocado before serving if desired.

Notes

  • Use pre-cooked shrimp for ease, or briefly boil raw shrimp. Adjust jalapeño to your spice level preference.
