This easy chicken burrito casserole is a cheesy, comforting dish packed with seasoned chicken, beans, rice, and salsa—baked to golden perfection.
Ingredients
- 2 cups cooked, shredded chicken
- 1 cup cooked white rice
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 1 packet taco seasoning
- 1½ cups shredded cheddar cheese
- 1 cup sour cream
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Chopped cilantro for garnish
Instructions

Preheat oven to 375°F (190°C).

In a large bowl, mix chicken, rice, beans, corn, salsa, taco seasoning, garlic powder, onion powder, and 1 cup of cheese.

Transfer the mixture to a greased 9×13-inch baking dish.

Spread sour cream over the top and sprinkle with remaining cheese.
