Ingredients
- 1 tablespoon olive oil
- 1 small onion, sliced
- 2 garlic cloves, minced
- 2 chipotle peppers in adobo, chopped
- 1 teaspoon adobo sauce
- 1 (15 oz) can crushed tomatoes
- 1/2 teaspoon oregano
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 cups shredded cooked chicken
- Corn tortillas or tostadas for serving
- Toppings: sour cream, avocado, queso fresco, cilantro

In a large skillet, heat olive oil over medium heat. Sauté onion until softened, about 4 minutes. Add garlic and cook for 1 minute.
