Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, sliced
  • 2 garlic cloves, minced
  • 2 chipotle peppers in adobo, chopped
  • 1 teaspoon adobo sauce
  • 1 (15 oz) can crushed tomatoes
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups shredded cooked chicken
  • Corn tortillas or tostadas for serving
  • Toppings: sour cream, avocado, queso fresco, cilantro

Instructions

  • In a large skillet, heat olive oil over medium heat. Sauté onion until softened, about 4 minutes. Add garlic and cook for 1 minute.
