Ingredients

  • 2 medium beets
  • 4 cups mixed salad greens (such as arugula, spinach, and romaine)
  • 4 ounces goat cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 1/4 cup balsamic vinaigrette
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F. Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes, or until tender when pierced with a fork. Allow to cool, then peel and slice into wedges.
