Ingredients
- 1 box (15.25 oz) strawberry cake mix
- 2 large eggs
- 1/3 cup vegetable oil
- 1/2 cup white chocolate chips
- 1/2 cup chopped strawberries (fresh or frozen, thawed)
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the strawberry cake mix, eggs, and vegetable oil. Mix until well combined and a dough forms.
- Gently fold in the white chocolate chips and chopped strawberries until evenly distributed.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- If desired, dust with powdered sugar before serving.
Notes
- For a fun twist, substitute the white chocolate chips with dark chocolate chips or chopped nuts.
- To enhance the strawberry flavor, add a teaspoon of strawberry extract to the dough.
