Ingredients

  • 1 pound flank steak, sliced into thin strips
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 1 bell pepper (red or green), sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup beef broth
  • 8 small flour tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large bowl, combine the sliced flank steak, olive oil, onion, bell pepper, garlic powder, chili powder, cumin, smoked paprika, salt, and black pepper. Toss until the steak and vegetables are evenly coated with the spices.
  2. Place the mixture into the slow cooker and pour the beef broth over it. Stir to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the steak is tender and the flavors are well blended.
  4. Once cooked, shred the steak using two forks and mix it back with the vegetables and juices in the slow cooker.
