  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for 4-5 minutes until translucent.
  2. Stir in minced garlic and grated ginger, cooking for another minute.
  3. Add sliced red bell pepper and sauté for 3-4 minutes.
  4. Pour in coconut milk and broth, stir well, and bring to a gentle simmer.
  5. Add lime juice, fish sauce, and sugar; stir thoroughly.
