Ingredients
  

For the Salad
  • 2 pieces Chicken Breasts can substitute with shredded rotisserie chicken
  • 1 packet Taco Seasoning store-bought or homemade
  • 2 tablespoons Cooking Oil Olive oil, avocado oil, or vegetable oil
  • 1 cup Red Enchilada Sauce any brand or homemade
  • 1 cup Sour Cream Greek yogurt is a healthier substitute
  • 2 tablespoons Lime Juice fresh or bottled
  • 16 oz Pasta rotini or any preferred shape
  • 1 can Black Beans drained and rinsed
  • 1 cup Yellow Corn frozen or canned, drained
  • 1 small Red Onion substitute with green onions if desired
  • 1 piece Jalapeño omit for a milder dish
  • 1/2 cup Chopped Olives optional
  • 1/4 cup Chopped Cilantro or parsley
For the Dressing
  • 1 cup Creamy Enchilada Sauce mix of red enchilada sauce and sour cream

Preparation Steps
  1. Pat dry the chicken breasts and sprinkle taco seasoning over both sides. Heat olive oil in a non-stick skillet over medium-high heat, then cook the chicken for 5-7 minutes per side until golden and cooked through.
  2. Transfer the cooked chicken to a cutting board and let it rest for 10 minutes. Chop into ½-inch cubes.
  3. In a large mixing bowl, whisk together red enchilada sauce, sour cream, and lime juice until smooth.
  4. Add the chopped chicken, cooked pasta, black beans, corn, red onion, jalapeño, and olives to the dressing. Toss to combine thoroughly.
  5. Sprinkle with chopped cilantro and refrigerate for at least one hour before serving.
