- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Wash and peel the sweet potatoes, then slice them into 1/4-inch thick rounds.
- Arrange the rounds in a single layer on the baking sheet and drizzle with olive oil, then season with salt and pepper.
- Roast in the oven for 20-25 minutes, flipping halfway through.
- Top each round with a slice of brie cheese and return to the oven for another 5 minutes.
